Preparation
- Marinate Chicken: In a bowl, whisk together olive oil, lemon juice, oregano, garlic, salt, and pepper. Add chicken breasts and let marinate for at least 30 minutes or up to 4 hours.
- Prepare Tzatziki: Grate cucumber, squeeze excess water out, and mix with yogurt, lemon juice, dill, garlic, and salt. Refrigerate until ready to serve.
- Cook Rice: Heat butter/oil over medium heat. Toast rice for 1 minute. Add broth, bring to boil, reduce heat, cover, and simmer for 15-20 minutes. Fluff with parsley and dill after resting.
- Grill Chicken: Preheat grill to medium-high. Grill chicken for 6-8 minutes per side until cooked through. Rest before slicing.
- Serve: Plate grilled chicken with herbed rice and tzatziki. Optionally serve with lemon wedges.
