Ingredients
  

Chicken Marinade
  • 4 pieces Chicken Breasts boneless and skinless
  • 1/4 cup Olive Oil can substitute with avocado oil
  • 2 tablespoons Fresh Lemon Juice use fresh for best flavor
  • 2 teaspoons Dried Oregano or fresh oregano
  • 3 cloves Minced Garlic fresh is ideal
  • to taste Salt
  • to taste Pepper
Tzatziki Sauce
  • 1 medium Cucumber grated and drained
  • 1 cup Greek Yogurt or non-dairy yogurt
  • 1 tablespoon Fresh Dill or parsley/mint if preferred
Rice
  • 1 tablespoon Butter or Olive Oil
  • 1 cup Rice long-grain or basmati; quinoa is an alternative
  • 2 cups Chicken Broth or vegetable broth
  • 1/4 cup Fresh Parsley optional garnish

Method
 

Preparation
  1. Marinate Chicken: In a bowl, whisk together olive oil, lemon juice, oregano, garlic, salt, and pepper. Add chicken breasts and let marinate for at least 30 minutes or up to 4 hours.
  2. Prepare Tzatziki: Grate cucumber, squeeze excess water out, and mix with yogurt, lemon juice, dill, garlic, and salt. Refrigerate until ready to serve.
  3. Cook Rice: Heat butter/oil over medium heat. Toast rice for 1 minute. Add broth, bring to boil, reduce heat, cover, and simmer for 15-20 minutes. Fluff with parsley and dill after resting.
  4. Grill Chicken: Preheat grill to medium-high. Grill chicken for 6-8 minutes per side until cooked through. Rest before slicing.
  5. Serve: Plate grilled chicken with herbed rice and tzatziki. Optionally serve with lemon wedges.
