- Blanch fresh cauliflower florets in boiling water for about 3 minutes. Drain thoroughly and set aside, ensuring they’re not watery to avoid a soggy casserole.
- In a large skillet, heat olive oil over medium heat. Sauté the chopped onion until softened—about 4-5 minutes. Then add minced garlic and red pepper flakes, cooking for an additional minute.
- Crumble in the ground beef, season with salt and pepper, and brown it until fully cooked, around 6-8 minutes.
- Stir in tomato paste and oregano, cooking for an extra 2 minutes. Pour in the crushed tomatoes, reduce heat, and let it simmer for 15 minutes, allowing those delicious flavors to meld together.
- In a large mixing bowl, combine the cauliflower with the meat sauce. In a 9x13 casserole dish, layer half the cauliflower mixture, then top with half of the ricotta, mozzarella, and Parmesan. Repeat the layers to use all ingredients.
- Preheat your oven to 375°F (190°C) and bake the assembled ziti for about 25 minutes, or until it’s bubbly and golden. Let it cool slightly before serving hot!
