  • 1 cup Warm Milk 105-115°F
  • 2 teaspoons Active Dry Yeast or instant yeast
  • 1 tablespoon Granulated Sugar
  • 1 large Egg or flax egg for vegan option
  • 2 teaspoons Vanilla Extract or almond extract
  • 1 teaspoon Salt
  • 2 tablespoons Unsalted Butter melted, margarine for dairy-free
  • 3.5-4 cups All-Purpose Flour or bread flour for chewier texture
For Frying
  • Vegetable Oil as needed neutral oil with a high smoke point
To Serve
  • 1 cup Powdered Sugar for dusting

Method
 

Basic Instructions
  1. In a large bowl, mix warm milk, active dry yeast, and a pinch of sugar. Let sit until foamy for about 5-10 minutes.
  2. Stir in the remaining granulated sugar, egg, vanilla extract, salt, and melted butter. Mix until smooth.
  3. Gradually add in the flour, mixing to form a soft dough. Knead for 5-7 minutes until elastic.
  4. Transfer the dough to a greased bowl, cover with a cloth, and let rise until doubled in size, 1-1.5 hours.
  5. Punch down the dough and roll it out to 1/4 inch thick. Cut into 2-3 inch squares.
  6. Heat vegetable oil to 350°F. Fry the beignets in batches for 1-2 minutes per side until golden brown.
  7. Drain on paper towels and dust with powdered sugar while warm.
