How to Make Mediterranean Baked Fish
  1. Preheat your oven to 400°F (200°C) and grease a baking dish with olive oil to ensure the fish doesn't stick while it bakes.
  2. In a large bowl, toss the sliced onions, red and yellow bell peppers, halved cherry tomatoes, minced garlic, Kalamata olives, and optional capers with olive oil, oregano, paprika, salt, and pepper until all are evenly coated.
  3. Spread the vibrant vegetable mixture evenly in the prepared baking dish. Place your fish fillets on top with the skin side down. Squeeze fresh lemon juice all over the fillets and sprinkle the lemon zest for an added citrus kick.
  4. Slide the dish into the oven and bake uncovered for 20–25 minutes. You’ll know it’s ready when the fish is opaque and flakes easily, and the vegetables are tender and slightly caramelized.
  5. Once baked, sprinkle fresh chopped parsley over the dish for a burst of freshness. Serve with lemon wedges to brighten every bite.
