- Drain both cans of chickpeas in a colander and rinse thoroughly under cool running water. Allow excess moisture to drain.
- Dice the cucumber, halve the cherry tomatoes, finely chop the red onion, and slice the pitted Kalamata olives.
- Chop the fresh parsley and optional dill. Crumble the feta cheese into small pieces.
- In a large mixing bowl, combine the drained chickpeas, cucumber, cherry tomatoes, red onion, Kalamata olives, feta, parsley, and dill.
- In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, Dijon mustard, honey, minced garlic, dried oregano, ground black pepper, and salt until combined.
- Pour the lemon-garlic dressing over the chickpea mixture and gently toss until all ingredients have an even coating.
- Taste the salad and adjust the seasoning with additional lemon juice, salt, or pepper if needed.
- Serve immediately, or cover and refrigerate for 20 to 30 minutes to allow the flavors to blend.
- Gently toss the salad again before serving. Enjoy on its own, over greens, with warm pita bread, or as a side dish.

Notes
Prep Time: 15 minutes. Optional Chill Time: 20–30 minutes. Total Time: 15–45 minutes. Servings: 6. Rinse and drain canned chickpeas thoroughly. For a milder onion flavor, soak diced red onion in cold water for 5–10 minutes, then drain. Season carefully because feta and olives contain salt. Store in an airtight container in the refrigerator at 40°F or below for 3–4 days. Do not freeze. For a vegan variation, substitute plant-based feta and maple syrup for honey. Nutrition values are approximate per serving and depend on specific ingredient brands.
