How to Make Breakfast Twice Baked Potatoes
  1. Preheat the Oven by setting it to 400°F (200°C) and lining a baking sheet with foil.
  2. Bake the Potatoes by piercing them with a fork and placing them on the prepared baking sheet. Bake for 40-45 minutes until fluffy.
  3. Cool and Slice the baked potatoes slightly, then slice each potato lengthwise and scoop out most of the insides.
  4. Mash the Filling by combining the scooped potato with eggs, milk, cheese, bacon, green onions, and seasonings.
  5. Refill the Shells by spooning the filling back into the skins and topping with extra cheese if desired.
  6. Add the Finish by brushing the tops with melted butter and returning them to the oven for another 10 minutes until golden.
