How to Make Fried Egg Quesadilla
- Heat a non-stick skillet over medium heat and add butter until melted and bubbling.
- Crack one egg into the skillet, season with salt and pepper and cook until the white is set and the yolk is runny, about 2-3 minutes. Repeat with the second egg.
- In the same skillet, place one tortilla and sprinkle half of the cheese on top, followed by the fried eggs and sliced avocado.
- Layer the remaining cheese over the eggs, cover with the second tortilla to create a sandwich.
- Cook for 2-3 minutes on each side until the tortillas are golden brown and crispy and the cheese is melted.
- Remove from the skillet, cut into wedges, and serve hot.
