  • 2 pieces Flour tortillas Fresh or homemade preferred
  • 2 large Eggs Cook until yolk is runny
  • 1 cup Shredded cheese Cheddar or mozzarella recommended
  • 1 piece Avocado Slice for topping
  • 2 tablespoons Butter For frying
  • to taste Salt and pepper Essential for seasoning

How to Make Fried Egg Quesadilla
  1. Heat a non-stick skillet over medium heat and add butter until melted and bubbling.
  2. Crack one egg into the skillet, season with salt and pepper and cook until the white is set and the yolk is runny, about 2-3 minutes. Repeat with the second egg.
  3. In the same skillet, place one tortilla and sprinkle half of the cheese on top, followed by the fried eggs and sliced avocado.
  4. Layer the remaining cheese over the eggs, cover with the second tortilla to create a sandwich.
  5. Cook for 2-3 minutes on each side until the tortillas are golden brown and crispy and the cheese is melted.
  6. Remove from the skillet, cut into wedges, and serve hot.
