  • 1 pound Sirloin Steak Cook to medium-rare
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic Minced
  • 2 tablespoons Lemon Juice Fresh
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Salt Adjust to taste

  • 1 cup Cherry Tomatoes Halved

  • 1 cup Roasted Chickpeas Optional
  • 1/2 cup Feta Cheese Crumbled or vegan cheese
  • 1/4 cup Fresh Herbs Parsley or dill
For the Tzatziki
  • 1 cup Greek Yogurt Or coconut yogurt for non-dairy
  • 1/2 cup Grated Cucumber Drained
  • 1 tablespoon Dill Fresh
  • 1 teaspoon Honey Optional

Cooking Steps
  1. Marinate the Steak: In a mixing bowl, combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Coat the steak and let it marinate for 30 minutes to 4 hours.
  2. Prepare Tzatziki: In another bowl, mix Greek yogurt, grated cucumber, dill, and honey. Chill in the fridge.
  3. Make Vinaigrette: Whisk together olive oil, lemon juice, salt, and pepper in a small bowl until emulsified.
  4. Cook the Steak: Heat a skillet over high heat, add the marinated steak, and sear for 4-5 minutes on each side until medium-rare. Let it rest before slicing.
  5. Assemble Bowls: Layer cooked grains in bowls, top with steak slices, cherry tomatoes, cucumber, red onion, chickpeas, olives, and feta. Drizzle with tzatziki and vinaigrette.
  6. Optionally, top with fresh herbs for extra flavor.
