Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil for searing
For the Filling
  • 1 cup crumbled feta cheese
  • 1 cup fresh spinach, chopped
  • ½ cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • ½ teaspoon red pepper flakes (optional)
For Baking
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts between two pieces of plastic wrap and gently pound them to an even thickness.
Filling
  1. In a bowl, combine the crumbled feta cheese, chopped spinach, sun-dried tomatoes, minced garlic, and red pepper flakes (if using). Mix well.
Rolling the Chicken
  1. Season the chicken breasts with salt, black pepper, garlic powder, oregano, and smoked paprika.
  2. Place a generous amount of the filling on one end of each chicken breast and roll it up tightly. Secure with toothpicks if needed.
Cooking
  1. Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.
  2. Add the rolled chicken and sear for about 3-4 minutes on each side until golden brown.
  3. Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the internal temperature reaches 165°F (75°C).

Notes

Careful not to overfill the chicken. You can use pre-cooked chicken or shredded rotisserie chicken to save time. Make sure to sear well before baking for a nice crust.
