Preparation
- Preheat your oven to 375°F (190°C).
- Place the chicken breasts between two pieces of plastic wrap and gently pound them to an even thickness.
Filling
- In a bowl, combine the crumbled feta cheese, chopped spinach, sun-dried tomatoes, minced garlic, and red pepper flakes (if using). Mix well.
Rolling the Chicken
- Season the chicken breasts with salt, black pepper, garlic powder, oregano, and smoked paprika.
- Place a generous amount of the filling on one end of each chicken breast and roll it up tightly. Secure with toothpicks if needed.
Cooking
- Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.
- Add the rolled chicken and sear for about 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
