  • 2 medium Carrots Slice thin for even cooking.

Method
 

How to Make One Pan Balsamic Chicken and Veggies
  1. Preheat oven to 400°F (200°C).
  2. In a skillet, warm olive oil and sear the chicken for 2-3 minutes per side.
  3. In a bowl, whisk together balsamic vinegar, olive oil, honey, minced garlic, Italian seasoning, salt, and pepper.
  4. Spread the bell peppers, zucchini, cherry tomatoes, broccoli, and carrots on a baking sheet. Drizzle with olive oil and season to taste.
  5. Place the seared chicken in the center of the baking sheet.
  6. Pour the balsamic marinade over the chicken and vegetables.
  7. Bake for 20-30 minutes until chicken reaches an internal temperature of 165°F (75°C).
  8. Toss the vegetables halfway through cooking.
  9. Garnish with fresh parsley, Parmesan, or basil before serving.
