  • 1 can Fire Roasted Diced Tomatoes Regular diced tomatoes can be used as a substitute.
  • 1 cup Whole Kernel Corn Both canned and frozen corn work well.
  • 1 can Chili Beans Black or pinto beans can be used.
  • 1 can Navy Beans Drain and rinse before using.
  • 1 tsp Garlic Powder 1 clove of fresh garlic can be substituted.
  • 1 tsp Ground Cumin Adjust for taste.
  • 1 tbsp Chili Powder Adjust according to heat preference.
  • 1 tsp Salt Adjust to taste.
Topping
  • 1 box Cornbread Mix Choose your preferred mix.

Method
 

Cooking Steps
  1. Preheat the oven to 375°F (190°C) and prepare a cast iron skillet (10” or larger).
  2. Brown the ground beef in a medium pan over medium heat until fully cooked, about 5-7 minutes.
  3. Mix the cornbread mix according to package instructions in a large mixing bowl; don't bake it yet.
  4. Combine the cooked beef, diced onions, garlic powder, cumin, chili powder, diced tomatoes, chili beans, drained navy beans, and corn in the skillet. Stir thoroughly.
  5. Spread the cornbread batter evenly over the chili mixture in the skillet.
  6. Bake for 25-30 minutes until the cornbread is golden brown.
  7. Serve hot, topped with cheddar cheese, chopped green onions, and sour cream if desired.
