Cooking Steps
- Preheat the oven to 375°F (190°C) and prepare a cast iron skillet (10” or larger).
- Brown the ground beef in a medium pan over medium heat until fully cooked, about 5-7 minutes.
- Mix the cornbread mix according to package instructions in a large mixing bowl; don't bake it yet.
- Combine the cooked beef, diced onions, garlic powder, cumin, chili powder, diced tomatoes, chili beans, drained navy beans, and corn in the skillet. Stir thoroughly.
- Spread the cornbread batter evenly over the chili mixture in the skillet.
- Bake for 25-30 minutes until the cornbread is golden brown.
- Serve hot, topped with cheddar cheese, chopped green onions, and sour cream if desired.
