Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Pat dry the chicken breasts and season them with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat. Cook the chicken for 6-7 minutes on each side until golden brown.
  4. Remove the chicken from the skillet, let it rest for 5 minutes, and then slice into thin strips.
  5. Prepare the flatbreads on a baking sheet, spreading the fresh basil pesto evenly over each one.
  6. Distribute the sliced chicken over the pesto, followed by mozzarella cheese and halved cherry tomatoes.
  7. Top with grated Parmesan cheese.
  8. Bake for 10-12 minutes until the cheese is bubbly and the edges are golden brown.
  9. Optional: Switch to broil for the last 1-2 minutes for extra crunch, watching closely.
  10. Cool slightly, slice into serving pieces, garnish with fresh basil leaves, and serve warm.
