Preparation
- Preheat the oven to 400°F (200°C).
- Pat dry the chicken breasts and season them with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Cook the chicken for 6-7 minutes on each side until golden brown.
- Remove the chicken from the skillet, let it rest for 5 minutes, and then slice into thin strips.
- Prepare the flatbreads on a baking sheet, spreading the fresh basil pesto evenly over each one.
- Distribute the sliced chicken over the pesto, followed by mozzarella cheese and halved cherry tomatoes.
- Top with grated Parmesan cheese.
- Bake for 10-12 minutes until the cheese is bubbly and the edges are golden brown.
- Optional: Switch to broil for the last 1-2 minutes for extra crunch, watching closely.
- Cool slightly, slice into serving pieces, garnish with fresh basil leaves, and serve warm.
