  • 6 cups Vegetable Broth Low-sodium if preferred.
  • 1 teaspoon Thyme Dried or fresh.
  • 1 teaspoon Smoked Paprika Or regular paprika.
  • to taste Salt & Pepper Adjust to taste.
For Creaminess and Flavor
  • 1 can Coconut Milk Can substitute with cashew cream.
  • 1/4 cup Nutritional Yeast For cheesy flavor.
  • 2 tablespoons Olive Oil Optional for lower fat.

Method
 

Preparation
  1. Start by peeling and dicing your potatoes. Then, chop the onions, celery, and carrots, and mince the garlic.
Combine in Crockpot
  1. Place all the chopped vegetables and minced garlic into a large crockpot. Pour in the vegetable broth along with thyme, smoked paprika, salt, and pepper. Stir gently to combine.
Cooking
  1. Cover the crockpot, and set it to low for 6-8 hours or high for 3-4 hours.
Blending
  1. Once cooked, use an immersion blender to achieve your desired consistency.
Incorporation
  1. Stir in the rich coconut milk, nutritional yeast, and a drizzle of olive oil. Allow it to warm through for about 15-20 minutes.
Serving
  1. Ladle the soup into bowls and garnish with fresh herbs, croutons, or vegan bacon bits.
