  • 1 cup Mochiko (Sweet Rice Flour) or glutinous rice flour
  • 1 cup Water for combining
  • 2 tablespoons Sugar any type
  • 1 teaspoon Red Food Coloring optional
For the Filling
  • 8 pieces Fresh Strawberries small and firm
For Dusting
  • 1 cup Cornstarch for preventing sticking

Method
 

How to Make Strawberry Mochi
  1. Blend 8 fresh strawberries with 1 cup of water until smooth.
  2. In a microwave-safe bowl, combine the strawberry purée with 1 cup of mochiko flour, 2 tablespoons of sugar, and optional red food coloring. Stir until smooth.
  3. Microwave the mixture on high for 2 minutes, stir, then microwave for another minute.
  4. Dust a baking sheet with cornstarch. Transfer the hot mochi dough onto it and dust the top with more cornstarch.
  5. Cut the mochi sheet into 8 squares, place a whole strawberry in the center of each, and seal tightly.
  6. Enjoy immediately or store properly for later.
