How to Make Strawberry Mochi
- Blend 8 fresh strawberries with 1 cup of water until smooth.
- In a microwave-safe bowl, combine the strawberry purée with 1 cup of mochiko flour, 2 tablespoons of sugar, and optional red food coloring. Stir until smooth.
- Microwave the mixture on high for 2 minutes, stir, then microwave for another minute.
- Dust a baking sheet with cornstarch. Transfer the hot mochi dough onto it and dust the top with more cornstarch.
- Cut the mochi sheet into 8 squares, place a whole strawberry in the center of each, and seal tightly.
- Enjoy immediately or store properly for later.
