  • 2 medium Sweet Potatoes can substitute with butternut squash or regular potatoes
  • 1 cup Shredded Monterey Jack and Cheddar Cheese any cheese blend including mozzarella can work

Instructions
  1. Preheat the oven to 400°F (200°C). This step is crucial, as a hot oven will ensure the casserole cooks evenly and the flavors meld beautifully.
  2. Brown the ground beef in a 12-inch cast iron skillet over medium-high heat until fully cooked, approximately 6-8 minutes. Drain the excess grease but leave about 1 tablespoon for flavor.
  3. Add the diced onion, garlic, red bell pepper, diced sweet potatoes, and spices (chili powder, cumin, oregano) to the skillet. Cook while stirring for about 3-5 minutes, until the vegetables soften and become fragrant.
  4. Stir in the crushed tomatoes, black beans, and beef broth. Bring the mixture to a simmer while ensuring all ingredients are well combined.
  5. Transfer the cast iron skillet into the oven and bake for 35-40 minutes, or until the sweet potatoes are fork-tender and everything is bubbling delightfully.
  6. Remove from the oven, sprinkle the shredded cheese generously over the top, and broil for an additional 2-3 minutes until the cheese is melted and just begins to brown.
