How to Make Easy Asian Cucumber Salad
  1. Rinse and slice: Start by rinsing your Persian cucumbers well. Slice one end at an angle, continuing to cut into thin, oval slices to best showcase their crispness.
  2. Salt to drain: Place your cucumber slices in a bowl and sprinkle with ½ teaspoon of salt. Toss them gently and let them sit in the fridge for at least 20 minutes to draw out excess moisture.
  3. Drain and rinse: After the resting period, drain the excess water from the cucumbers. Give them a quick rinse to remove any excess salt and return them to the bowl.
  4. Mix the dressing: In the bowl with the cucumbers, add sesame oil, light soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and the optional minced garlic.
