How to Make Crockpot Sausage Casserole
- Wash and dice your potatoes into bite-sized pieces, chop the onion and bell pepper, and slice the sausage.
- Combine the sliced sausage, diced potatoes, chopped vegetables, diced tomatoes (with their juices), chicken broth, and paprika in the crockpot.
- Cover the crockpot and set it to cook on low for 5–6 hours until the potatoes are fork-tender.
- Stir before serving, ladle into bowls, and season with salt and pepper if needed.
