- Wash the cucumbers thoroughly and slice into thick rounds approximately 1/4 to 1/3 inch thick.
- Place the sliced cucumbers in a mixing bowl or colander. Sprinkle with 1/2 teaspoon salt and gently toss.
- Let the cucumbers rest for 10 to 15 minutes. Drain off the released liquid and pat the slices dry with paper towels.
- In a separate mixing bowl, whisk together the mayonnaise, soy sauce, rice vinegar, toasted sesame oil, honey or sugar, minced garlic, and optional red pepper flakes until smooth.
- Add the drained cucumber slices to the creamy sesame dressing.
- Add the sliced green onions and gently toss until the cucumbers are evenly coated with dressing.
- Sprinkle the sesame seeds over the salad and stir gently to distribute.
- Cover the salad and refrigerate for 10 to 15 minutes so the flavors can blend.
- Gently toss the salad again before serving. Garnish with additional green onions or sesame seeds if desired and serve chilled.

Notes
Prep time: 10 minutes. Draining time: 10–15 minutes. Chilling time: 10–15 minutes. Total time: 30–40 minutes. Servings: 4. Use 3–4 Persian cucumbers or approximately 1 large English cucumber, aiming for about 3 cups sliced. Salt the cucumbers and drain thoroughly to prevent a watery dressing. Toasted sesame oil provides the best nutty flavor. For a lighter dressing, substitute part of the mayonnaise with plain Greek yogurt. Store in an airtight container in the refrigerator at 40°F or below. Enjoy within 24 hours for the best texture. Do not freeze.
