- Preheat oven to 350°F and line an 8×8-inch pan with parchment.
- Whisk melted butter, granulated sugar, brown sugar, and cocoa until smooth.
- Add eggs one at a time, then mix in vanilla.
- Fold in flour and salt until just combined.
- Spread batter into the pan and bake 22–25 minutes until slightly underbaked in the center.
- Cool completely, then chill brownies for at least 1 hour.
- Melt chocolate chips with coconut oil until smooth.
- Cut brownies into bars and dip each piece into melted chocolate.
- Place dipped bars on parchment and chill until the coating sets.
- Store in an airtight container at room temperature or chilled.
