For the Mashed Potatoes
  • 2 lb Potatoes Russet or Yukon Gold.
  • 2 tbsp Olive Oil For sautéing.
  • 4 oz Light Cream Cheese Or sour cream.
  • 1 cup Grated Sharp Cheddar Cheese Or milder cheddar.
  • 1 large Egg For glazing.

Method
 

Preparation Steps
  1. Boil Potatoes: Peel, quarter, and boil the potatoes in salted water for about 15-20 minutes until tender.
  2. Sauté Aromatics: Heat olive oil in a skillet over medium-high heat, sauté onion and garlic until soft, about 3-5 minutes.
  3. Cook Turkey Filling: Add ground turkey, cook until browned, then stir in peppers, corn, chilies, and spices; cook until peppers soften, about 5-7 minutes.
  4. Prepare Mash: Drain tender potatoes, mash with cream cheese and cheddar until smooth.
  5. Assemble and Bake: Spread mashed potatoes over turkey filling, brush with beaten egg, and bake at 350°F for 45 minutes until golden brown.
