Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded Mexican blend cheese
  • 1 jalapeño, finely diced
  • 1 cup tortilla chips, crushed
  • 12 egg roll wrappers
  • oil for frying

Method
 

  1. Cook ground beef in a skillet over medium heat until browned. Drain excess grease.
  2. Stir in taco seasoning, black beans, corn, jalapeño, and crushed tortilla chips. Remove from heat and fold in cheese.
  3. Place filling in the center of each egg roll wrapper. Roll tightly and seal edges with water.
  4. Fry egg rolls in hot oil until golden brown. Drain on paper towels and serve hot.
