- Cook ground beef in a skillet over medium heat until browned. Drain excess grease.
- Stir in taco seasoning, black beans, corn, jalapeño, and crushed tortilla chips. Remove from heat and fold in cheese.
- Place filling in the center of each egg roll wrapper. Roll tightly and seal edges with water.
- Fry egg rolls in hot oil until golden brown. Drain on paper towels and serve hot.
