Ingredients
  

  • 3 lb chicken pieces, bone-in skin-on
  • 3 cups buttermilk
  • 2.5 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 0.5 tsp cayenne pepper
  • oil for frying

Method
 

  1. Combine chicken and buttermilk with seasoning. Cover and refrigerate at least 4 hours.
  2. Mix flour and remaining spices in a shallow bowl.
  3. Dredge marinated chicken in seasoned flour and let rest briefly.
  4. Heat oil and fry chicken in batches until golden and cooked through.
