Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, drained
  • 1 cup sour cream or yogurt

Method
 

  1. Preheat oven to 350°F and grease a baking pan.
  2. Whisk flour, baking powder, baking soda, spices, and salt.
  3. Cream butter and sugar until fluffy, then add eggs and vanilla.
  4. Alternate adding dry ingredients and sour cream. Fold in pineapple.
  5. Bake until set, glaze while warm, and cool before slicing.
