An easy, cheesy Mexican White Trash Casserole made with tortilla chips, creamy enchilada sauce, taco seasoning, and melted cheese.

Ingredients
  

  • 6 oz tortilla chips, crushed
  • 2 cups shredded Mexican blend cheese
  • 10 oz enchilada sauce
  • 1 cup sour cream
  • 4 oz diced green chilies
  • 1 packet taco seasoning mix
  • 1 cup cooked shredded chicken or ground beef (optional)
  • 1 cup black beans, drained and rinsed (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
  2. In a bowl, mix enchilada sauce, sour cream, diced green chilies, and taco seasoning until smooth. Stir in optional meat or beans if using.
  3. Spread half of the crushed tortilla chips in the baking dish. Top with half of the sauce mixture and half of the cheese.
  4. Repeat layers with remaining chips, sauce, and cheese.
  5. Bake uncovered for 20–25 minutes until cheese is melted and bubbly. Rest 5 minutes before serving.
