How to Make Chicken Wild Rice Casserole
- Preheat the oven to 350°F (175°C). In a large baking dish, mix together the chopped onion, carrots, celery, wild rice, and chicken broth. Cover it with foil, then bake for 1 hour and 15 minutes until the rice is tender.
- In a saucepan over medium heat, melt 4 tablespoons of butter. Whisk in the flour, salt, and poultry seasoning, cooking for about 1 minute. Gradually mix in the milk, stirring continuously until the sauce is smooth and thickened.
- While the sauce is cooking, melt the remaining 6 tablespoons of butter and toss in the cubed bread until well-coated.
- After the rice has cooked, remove the foil. Add the raw chicken pieces to the casserole, pour in the creamy sauce, and mix everything together. Finally, evenly layer the buttered bread cubes on top.
- Increase your oven temperature to 450°F (232°C). Bake the casserole uncovered for 20-30 minutes, until the chicken is cooked through and the bread cubes are golden brown and crispy.
- Once out of the oven, garnish with a sprinkle of salt, pepper, or fresh parsley before serving.
