For the Casserole Base
  • 1 pound Ground Beef or ground turkey
  • 1 medium Yellow Onion diced
  • 1 medium Green Bell Pepper diced
  • 1 teaspoon Garlic Salt
  • 1 teaspoon Onion Powder
  • 4 slices Bacon crumbled
  • 2 tablespoons Brown Sugar optional
  • 28 ounces Baked Beans your favorite brand
  • ½ cup Barbecue Sauce customizable
  • 2 tablespoons Dijon Mustard or yellow mustard
For the Cornbread Topping
  • 1 cup Cornmeal
  • 1 cup All-Purpose Flour or gluten-free flour
  • ¼ cup Granulated Sugar optional
  • 1 tablespoon Baking Powder
  • 1 teaspoon Kosher Salt adjust if using table salt
  • 1 cup Whole Milk or almond milk
  • 2 large Eggs or flax eggs for vegan
  • 6 tablespoons Unsalted Butter melted, or olive oil
  • 1 cup Mild Cheddar Cheese shredded
For Garnish
  • 1 tablespoon Parsley chopped

Method
 

Preparation
  1. Preheat the oven to 400°F.
  2. Cook the ground beef in a large oven-safe skillet over medium-high heat with diced onion, green pepper, garlic salt, and onion powder for 8-10 minutes until browned.
  3. Stir in the crumbled bacon, brown sugar, baked beans, barbecue sauce, and Dijon mustard until well combined.
  4. In a separate bowl, whisk together cornmeal, flour, sugar, baking powder, and salt for the cornbread topping.
  5. In another bowl, combine milk, eggs, and melted butter.
  6. Mix the dry ingredients into the wet until just combined, then fold in the shredded cheese.
  7. Pour the cornbread mixture over the beef and bean layer in the skillet, spreading it evenly.
  8. Bake for 20-25 minutes, or until a toothpick comes out clean.
  9. Garnish with fresh parsley before serving.
