  • 4 cups potatoes sliced thinly
  • 1 pound ground beef lean
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup carrots shredded
  • 1 cup corn canned or frozen
  • 2 cups cheddar cheese shredded
  • 1 cup heavy whipping cream
For Topping
  • 2 tablespoons butter dotted on top

Method
 

How to Make Healthy Hamburger and Potato Casserole
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef with onions, garlic, and shredded carrots. Season with salt and pepper.
  3. Line the bottom of a greased 9x13 pan with half of the potato slices. Dot with butter and season lightly.
  4. Spread the cooked beef mixture over the first layer of potatoes, followed by a layer of corn. Finish with the remaining potato slices on top, dotting with butter and sprinkling with shredded cheese.
  5. Pour the heavy cream evenly over the top layer.
  6. Cover with foil and bake for 30 minutes. Check for doneness; the potatoes should be tender.
