For the Jalapeño Filling
  • 4 whole Jalapeños Choose jalapeños with white stretch marks for extra heat.
  • 1 tbsp Olive Oil Used for roasting.
  • 8 oz Cream Cheese Ensure it's at room temperature.
  • 1 tsp Garlic Salt
  • 1 tsp Black Pepper
  • 1 tsp Onion Powder
For the Sandwich Assembly
  • 1 cup Mild Cheddar Cheese Feel free to substitute with pepper jack.
  • 6 slices Bacon Cook until crispy.
  • 4 slices Texas Toast Sturdy bread choice.

Method
 

Directions
  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. Brush the jalapeños with olive oil and place them on the baking sheet. Roast for 15 minutes, watching for the skins to slightly char.
  3. In a bowl, combine the cream cheese, garlic salt, black pepper, and onion powder until it's creamy and well blended. Fold in chopped roasted jalapeños.
  4. Take a slice of Texas toast and butter one side. Spread half of the cream cheese mixture on the non-buttered side and layer with 3 strips of crispy bacon and ½ cup of cheddar cheese. Top with another slice of bread, butter the outside, and repeat for the second sandwich.
  5. Heat a skillet over medium heat. Grill sandwiches for 3-5 minutes per side until golden brown and cheese melts. Serve immediately.
