  2. Simmer the sauce for about 5 minutes, stirring occasionally, until it thickens to a jam-like consistency.
  3. Season both sides of the chicken breasts generously with salt and pepper.
  4. Heat olive oil in an oven-safe skillet over medium-high heat until shimmering. Sear the chicken for 2-3 minutes per side until it's golden brown.
  5. Pour the blueberry sauce over the seared chicken in the skillet.
  6. Transfer the entire skillet to the oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F.
