- Preheat your oven to 375°F. While it’s heating, prepare the blueberry sauce by combining fresh blueberries, balsamic vinegar, honey, and thyme in a medium saucepan over medium heat. Gently smash the blueberries with a fork.
- Simmer the sauce for about 5 minutes, stirring occasionally, until it thickens to a jam-like consistency.
- Season both sides of the chicken breasts generously with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat until shimmering. Sear the chicken for 2-3 minutes per side until it's golden brown.
- Pour the blueberry sauce over the seared chicken in the skillet.
- Transfer the entire skillet to the oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F.
